Week 2: Menu

Well, we’ve had more than a week down. (When did I actually start this challenge?) This is what we have left on our Menu board:

  • Chili dogs and/or Fries – (Had these Saturday for lunch) Maybe not the healthiest meal, but we stocked up on Alexia potato products when Harps had them 2/$5 and they had $1 printables, making them $1.50 each. We also had a can of chili in the cabinet and plenty of cheese left over from last month’s Sam’s trip! (We use a lot of cheese.) And we happened to have some hot dogs left from last month too.
  • Tacos – (Had these Sunday for dinner) Yet another left over thing: taco shells. This includes the ground beef from Sam’s, beans left from last month, lettuce from the church garden, cheese from last month’s Sam’s trip and maybe even some tomatoes (if there are any left from Aldi).
  • Hamburgers – (Had these Monday for lunch) Using up most of the rest of the Sam’s hamburger, we mixed in an egg, some onions, oregano and a little garlic. I made potato bread dough in the bread machine (got to use this more often!) and baked some buns and then we used up some Alexia sweet potato fries!
  • Thai Peanut Rice – Inspired by the peanut butter! We have rice on hand already. To make Thai peanut sauce you just melt peanut butter with some milk until it’s smooth. We could use some chicken, any left over veggies (I even have some cabbage that needs to be used up!), and if you like it spicy a little Sriracha sauce. Pour sauce over rice (or even noodles). Yum!
  • Louisiana Chicken – Last month Zatarran’s had their fish fry breading on sale and there were coupons, so I bought 2. It was delicious, but I think it would be great on chicken too! So we’re going to give it a try with some baked chicken and maybe sweet potatoes and Sam’s green beans.
  • I still have a couple of chicken thighs left from last month in the freezer, so we might try the best roasted chicken ever again!!
  • Egg Casserole – I got 2 dozen eggs and we have quite a few veggies we could throw in them, maybe make a pie crust with some flour and butter, or corn meal and water and you’ve got a casserole! Oh, and I think I have some bacon left from Branson, that would be yummy too!

We’re going to Little Rock for Memorial Day (Ansen has to watch the race with his dadda!) Think we can make it to Friday on this? Surely we can! I think I’ll have to get another gallon of milk with my last $4 though, because I’m running low for cereal for breakfast! Then, I can do another 2 week shopping trip to finish up May and begin June. Wait! It’s June already?
