Homemade Tortilla for Cobb Salad Wraps

Well, I wanted to make cobb salad wraps Monday, but… we had no tortillas for wrapping, and little money left to buy them. I thought maybe I’d try my hand at making my own! The problem is that most of the recipes I found included butter, lard, Crisco… or some other variation of that. I didn’t have any of that, so I almost gave up. Then I found this recipe at The Homesick Texan. They turned out delicious and I will definitely try again!

They were beautiful!

And so were our cobb salad wraps. If you’ve never had them, you should try them. Here’s the recipe for 4.

1 chicken breast (grilled or baked) sliced
8 pieces of bacon
lettuce, shredded
shredded cheese (optional)
1 small tomato (cubed, seeds removed)
1 avocado, sliced thin
ranch
4 tortillas

Lay out the torillas. Squeeze an “s” down the middle of the tortilla with ranch (make sure to leave a little room at both ends. Place a handful of lettuce down down the center. Top with 4 or 5 slices of chicken, 2 pieces of bacon, a couple of slices of avocado, some tomatoes and cheese (if you want). The cheese is optional because it’s not essential to the balance, but the chicken, bacon, avocado and the tomatoes are pretty important. Fold in the bottom of the tortilla about an inch and a half (that was pretty much impossible with these homemade ones), fold one side over and then roll like a burrito. Yum! We often have them with chips or fries. Let me know if you try them and like them.
